This coffee comes from Finca Colomba, owned by the Adolfo family for three generations, and currently managed by Mario Valiente. About 10 years ago, Mario built a dry mill on the farm, which enables them to have total control over the coffee processing.  It has allowed them to branch out and experiment with processing methods from anaerobics to classic washed coffees.  

This lot is a honey process.  Once the coffee cherry is picked and pulped, some of the fruit is left on for an initial drying phase.  It results in a cup with nice sweetness, but not as fruity or funky as a full natural process coffee. 

We find notes of red apple, cinnamon, honey.

Grown at 1500m.

 340g, 2 lb or 5 lb whole bean coffee.
