Hacienda Sonora is a unique farm in the Central Valley of Costa Rica, where they farm over 20 coffee varietals. This lot is a Marsellesa varietal, fairly new in the coffee industry. Most coffees from this farm/mill are processed as honey or natural coffees, which reduces the water usage of the coffee processing. The coffee cherries from this lot are dried in a 'pyramid' pile, which gets rotated and re piled throughout the day to ensure even temperature and drying. It results in a fruity coffee with less of the 'boozy' notes that can sometimes be present in natural coffees.
