This washed pink bourbon lot comes from El Bosquecito, a farm run by brothers Fredi and Jamie Ortega. El Bosquecito is far from the coffee processing mill, and the harvested coffee cherries are transported on horseback. A small detail like this helps to highlight how much effort is put into producing specialty coffee!
The coffee processing is fairly typical with a short period of wet fermentation after harvest followed by depulping and a dry fermentation. The coffee is then given a final washing and is dried in solar dryers.
We find pink bourbon varietals often have a nice sweet cocoa base balanced by an overall bright and punchy flavour profile; and this one is no exception.
There are some more delicate floral notes that come through as the coffee rests. Our early notes on it are: cocoa, passionfruit and jasmine.
The farm elevation spans 1850 - 1910 meters above sea level.
